Healthy Banana Bread

One of the things I love is transforming traditional cakes into healthier versions. Not only I feel less guilty eating them, but they’re also more delicious! For instance, this banana cake has become one of my family’s favorite sweet treats.

On top of that, it is so super easy to cook. Basically, you just need to mix all the ingredients, which takes no more than 10-15 minutes and then put it in the oven for an hour or so. If you have been following me so far, you know that I don’t use complicated recipes. Life is busy, time is precious, and we should know how to make the best of it.

Still, nourishing your body with home-cooked, nutritious food is an integral part of a healthy, happy life! This banana cake recipe is perfect for a weekend treat, for family holidays or even for your ‘carb day’ – it is a blend of all the good, natural carbohydrates nature can provide…

Ingredients:

  • 1 cup whole-wheat flour
  • ¾ cup white flour
  • ½ cup raw honey
  • 1/3 cup olive oil
  • 2 organic eggs
  • 1 cup ripe banana* (mashed)
  • ¼ cup organic milk (or water)
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon (or cacao)
  • ½ tsp. salt
  • Optional: pieces of walnuts and dates, blueberries or other additions of your choice

Method:

  1. Preheat oven to 160°C.
  2. Mix the honey, olive oil and eggs, using a mixer.
  3. Mash the bananas and add them to the wet mixture.
  4. Pour in the milk (or water) and add in the baking soda.
  5. Add the rest of the cinnamon and salt. Beat well.
  6. Add in the flours, both the white and the whole-wheat. You can totally use only whole-wheat, however the cake might not rise that much. Mix with a fork.
  7. Add in the walnuts and dates or any other toppings you have chosen.
  8. Transfer to a loaf pan (approx. 23×15 cm) and bake for an hour (or until a toothpick comes out clean).
  9. Let the bread cool for 10-15 mins., then transfer to a plate and leave it for another 15 mins.

Nutrition: Bananas are a great source of vit. B6, manganese, vit. C and potassium. On top of that, they have been shown to improve mood and fight depression! The whole-wheat flour is a great alternative of the white flour and adds in more fiber which controls blood sugar and helps digestion. Feel guilt-free to try this sweet recipe – it is totally healthy and delicious!
